Pre-ground coffee is convenient. Whole bean coffee tastes better. But how big is the difference, and is buying a grinder really worth it? Here's what the research says, plus a simple grind size chart for every brew method.

The short answer

Whole bean coffee stays fresh longer and tastes noticeably better, because grinding exposes far more of the coffee to oxygen. If you drink coffee every day, a decent grinder is one of the best upgrades you can make.

Why ground coffee goes stale faster

Coffee flavour comes from delicate aromatic compounds. Oxygen breaks them down, and grinding multiplies the surface area that oxygen can reach.

  • A literature review published by the Specialty Coffee Association cites research finding that ground coffee had a staling rate about twice that of whole beans.
  • The same review notes that oxidation of coffee oils increases with the surface area of ground coffee.
  • Ground coffee also releases its carbon dioxide much faster, and that CO2 helps protect the beans from oxygen.

The National Coffee Association puts ground coffee's peak window at roughly one to two weeks after opening, compared with one to three weeks for whole beans, and recommends grinding only what you need right before brewing.

Grind size controls how fast water extracts flavour. Too fine and coffee tastes bitter and harsh. Too coarse and it tastes weak and sour. Use this as a starting point:

  • Extra coarse (like peppercorns): cold brew
  • Coarse (like sea salt): French press
  • Medium (like sand): drip machines and reusable Keurig K-cup pods
  • Medium-fine (like table salt): pour-over, such as V60 or Chemex
  • Fine (like powdered sugar, slightly gritty): espresso and moka pot

Tip: if your coffee tastes bitter, grind a little coarser. If it tastes sour or thin, grind a little finer.

Burr grinder vs blade grinder

Blade grinders chop beans with a spinning blade, leaving a mix of dust and chunks. That uneven grind extracts unevenly, so you get bitter and sour flavours in the same cup.

Burr grinders crush beans between two surfaces set a fixed distance apart, giving a consistent grind. Even an entry-level burr grinder is a big step up from a blade grinder. If you're buying one, buy burr.
