THE STORY
Not everyone is invited. Grown in the states of Minas Gerais and São Paulo at 750 to 1,050 metres, Midnight Club is processed using the pulped natural method. The outer skin is removed but the fruit sugars stay on the bean as it dries slowly in the sun, building a depth and sweetness that washed coffees cannot match. The result is full body, low acidity, and a richness that hits immediately. Dark chocolate up front. Walnut depth through the middle. Brown sugar on the finish that never turns bitter. Pull it as an espresso, steam it into a latte, or drink it black and mean it.

HOW TO BREW
Pour Over
- Grind: Medium-fine
- Water temp: 200-205F
- Ratio: 1:16 (20g coffee to 330g water)
- Time: 3-4 minutes
- Troubleshoot: Weak = finer grind, Bitter = coarser grind
French Press
- Grind: Coarse
- Water temp: 200F
- Ratio: 1:16
- Time: 4 minutes immersion
- Stir before pressing
Espresso
- Grind: Fine
- Ratio: 1:2 (18g in, 36g out)
- Temp: 200F
- Time: 25-30 seconds
